Regional Cuisines of Italy, Spain and France: Tuscan, Sicilian, Basque and Provençal

Italy has no single cuisine, and this puzzle shows why. Neapolitan cooking gave us pizza; Emilian, from Emilia-Romagna, Parmigiano and tortellini; Ligurian, pesto; Tuscan, bistecca and beans; Venetian, risotto and seafood; Sicilian, cannoli and caponata; and Apulian, Calabrian and Sardinian cooking add orecchiette, spicy 'nduja and crisp flatbreads.

Three regions from outside Italy join them: Basque and Catalan cooking from Spain, and Provençal cooking from the south of France.
