Fine Dining Terms: Amuse-Bouche, Omakase, Sommelier and Tasting Menu
The vocabulary of a fine dining restaurant. The maître d' welcomes you and the sommelier helps choose the wine; an amuse-bouche, a bite-sized gift from the chef, opens the meal; a clear consommé, an intermezzo to refresh the palate and an entremet dessert may follow. A prix fixe menu has a set price, and a tasting menu, degustazione in Italian, offers many small courses.
Two traditions come from Japan: kaiseki, a seasonal multi-course meal, and omakase, "I leave it to you", where the chef decides what you eat.
