Fermented Foods: Kimchi, Kombucha, Kefir, Miso and Sauerkraut

Foods transformed by microbes: Korean kimchi and German sauerkraut, both made from cabbage; kefir, a fermented milk drink; kombucha, a fizzy fermented tea; Japanese miso, shoyu (soy sauce), natto and amazake, all made with koji, a mold that turns starch into sugar; Indonesian tempeh; Eastern European kvass, made from bread; and rejuvelac, a sprouted-grain drink.

Fermentation is one of the oldest ways to preserve food. Many of these words have a K, so that letter will not help you much.

Words run across, up and down, and diagonally; 7 of the 12 read backwards. The longest word is Sauerkraut, with 10 letters.

  • Amazake: A sweet, low-alcohol Japanese drink made from rice fermented with koji.
  • Kefir: Milk fermented with kefir grains, a mix of bacteria and yeasts, slightly fizzy.
  • Kimchi: Korean fermented vegetables, usually napa cabbage with chili, garlic and ginger.
  • Koji: A mold grown on rice or soybeans that turns starch into sugar; it makes miso, soy sauce and sake.
  • Kombucha: A fizzy, slightly sour drink made by fermenting sweet tea.
  • Kvass: A traditional Eastern European drink fermented from rye bread.
  • Miso: A paste of soybeans fermented with koji for months or even years.
  • Natto: Japanese fermented soybeans with a strong smell and a sticky, stringy texture.
  • Rejuvelac: A fermented drink made from sprouted grains soaked in water.
  • Sauerkraut: Finely cut cabbage fermented with salt, from Germany and Central Europe.
  • Shoyu: The Japanese word for soy sauce.
  • Tempeh: A firm cake of fermented soybeans from Indonesia.

How to Solve the Fermented Foods Word Search

Eight words have a K, so look for other letters: "rejuvelac" has the only L, "tempeh" the only P and "shoyu" the only Y. "Sauerkraut", the longest word, runs upward. "Kvass" and "miso" are the only diagonal words.

Fermentation Science Activities

  • Make a small jar of sauerkraut with cabbage and salt and watch it ferment over a week.
  • Sort the foods by what they are made from: vegetables, milk, soybeans, tea or grain.
  • Ask students what microbes do during fermentation.
