Beef Cuts Explained: Brisket, Ribeye, Sirloin and Tenderloin
The primal and retail cuts of beef, from front to back: the chuck and the shoulder; the brisket and the plate underneath; the rib, which gives the ribeye; the loin, home of the tenderloin, the strip loin and the sirloin; the flank; the round at the back; and the shank from the legs.
Loin is the trap: it appears on its own and also inside sirloin, striploin and tenderloin, so check each one. Only chuck and plate are diagonal.
